Baked avocados

Perfect for breakfast, or any time of day…

Serves: 2

Preparation time: 5 minutes

Cooking time: 15-20 minutes

Ingredients

1 ripe avocado

2 fresh eggs

a pinch of pepper

1/2 tbsp chopped chives

Method

1 Preheat the oven to 180˚C/R4.

2 Slice the avocado in half and remove the pit. Scoop out 2 tablespoons of flesh from the centre of the avocado – just enough so the egg will fit snugly in the centre.

3 Place the avocado halves in a small baking dish. Do your best to make sure they fit tightly.

4 Crack an egg into each avocado half. Put the yolk in first and let the whites spill in to fill up the rest of the shell.

5 Place in the oven and bake for 15-20 minutes (cooking time will depend on the size of your eggs and avocado). Make sure the egg whites have enough time to set.

6 Remove from oven and season with pepper and chives.
