Blackberry Rice Brulee
A very quick, easy, classy brulee style dessert, using Rachel’s Divine Rice and fresh blackberries…
500g Rachel’s Divine Rice Pudding
Golden caster sugar – for the brulee
100g fresh blackberries
1. Take the rice pudding and stir well in the pot, decant into small ramekin dishes.
2. Sprinkle liberally with golden caster sugar and place 3-4 fresh blackberries in each ramekin.
3. Brulee with a blow torch or under a very hot grill until all the sugar has melted and caramelised.
4. Chill for a little while in the fridge before serving, to allow for the sugar topping to harden.
