Perfect for using up any classic pulled pork leftovers

Breakfast hash

Peel some potatoes and cut into small cubes then cook in boiling water for 4-5 minutes, or until just tender. Meanwhile heat a little oil in a frying pan and cook some chopped onion for 3-4 minutes until softened. Drain the potatoes and add to the pan, cook until lightly browned, then stir in some shredded cooked cabbage and leftover pulled pork. Season and cook until all the ingredients are browned and the pork heated through. This dish is delicious served with a poached or fried egg and a generous dollop of barbecue sauce.
