500g (18oz) minced beef
½ large red onion, finely chopped
1 garlic clove, crushed
2 tbsp tomato sauce
4 tbsp chopped fresh parsley
4 tsp dried thyme
1 egg yolk
4 burger buns, split and toasted
75g (3oz) Cheddar, sliced
2 tomatoes, sliced
¼ iceberg lettuce, roughly chopped
½ large red onion, finely sliced
1 Combine all of the burger ingredients and season well. Shape into four fat burgers and set to one side. Preheat a large griddle pan or non-stick frying pan, add the burgers and cook for 10-15 minutes, turning occasionally until cooked through.
2 Place a bun half on each plate and top each with sliced tomato, lettuce and then the burger. Scatter with the onion and serve with tomato sauce and oven fries.
Don’t go for super lean mince when you’re making burgers – you need a little fat to give a good texture and a lot of it will cook out anyway.
