Caramelised Pear And Dolcelatte Salad

A real flavour packed salad to serve as a quick lunch or even serve as a vegetarian starter – you could add beetroot or sunflower seeds also to this.

Ingredients:

2 pears, cored and sliced into eighths
2 tsp granular Canderel
2 tsps olive oil
15g walnut halves, halved
150g fresh watercress
40g Dolcelatte cheese, roughly chopped or torn

For the dressing:
1 tbsp olive oil
1 tsp white wine vinegar
1tsp Dijon mustard
1 tsp granular Canderel

Method:

1. First prepare the dressing, mix all the ingredients together in a bowl and season to taste with salt and freshly ground black pepper.

2. Toss the pears with the Canderel, so they get evenly coated then add the oil to a non-stick frying pan and add the pears a few at a time and cook for a couple of minutes on each side until golden. Remove and put to one side.

3. Chop the watercress a little if needed and add to a bowl. Then add the warm pears and walnuts and drizzle over a little dressing and toss very carefully, so you don’t break up the pear. Add the Dolcelatte and turn so it gets lightly coated then serve.
