Chicken Waldorf salad

Serves: 4
Preparation time: 15 minutes

500g (18oz) shredded cooked chicken

2 sliced celery sticks

2 chopped apples

50g (2oz) roughly chopped walnuts

150g (5oz) halved black grapes

Squeeze of lemon juice

4 tbsp mayonnaise

2 tbsp natural yoghurt

2 tsp Dijon mustard


Mix all the salad ingredients. Combine the mayonnaise with the natural yogurt, season well and flavour with the Dijon mustard. Pour over the salad and combine. Pile crisp green salad leaves on four plates, top with the salad and serve.
