Helen Worth’s Boiled Cider Fruit CakeIngredients:

4oz marg
14oz mixed fruit
1heaped teaspoon mixed spice
8oz S R flour
6 oz brown sugar
2eggs 8 oz fluid scrumpy jack cider
Cherries and almonds

Heat oven 180 c/ mark 4

Method:

Put into pan marg, sugar, fruit, cider mixed spice and bring to boil.
Allow to cool.
When cool add eggs and flour.
Mix well and pour into lined 8 ” round tin.
Bake in centre of preheated oven for approx 1and quarter hours.
Leave to cool in tin.
Store in airtight container for up to 4 weeks.
