Crab & apple toasties

Serves: 4

Crab & Apple ToastiesIngredients:

4 thick slices of a granary bloomer
2 tbsp brown crab meat
250g white crab meat
1 Kanzi apple
1 red chilli finely diced
The juice of 1 lime
4 tbsp low fat mayonnaise
2 spring onions finely chopped
1 tbsp coriander leaves


  1. Lightly toast the sour dough, then spread with a little brown crab meat.
  2. Finely dice the apple and place in a bowl with the crab meat, chilli, mayo and spring onions.
  3. Mix well and season. Top the toast with the crab mixture and scatter over the coriander leaves.
  4. Serve with a wedge of lime
