Nina Wadia’s Cumin Chicken
8 chicken drumsticks
1 large onion
3 tablespoons of vegetable oil
1and a half tablespoons whole cumin
1/2 teaspoon cumin powder
1 tablespoon ginger
1 tablespoon garlic
1/4 teaspoon turmeric
1/2 teaspoon chilli powder
3/4 teaspoon salt
Heat 3 tablespoons of oil in apan and add 1 and a half tablespoons whole cumin. Cook on high temperature till roasted.
Lower temperature and add 1 tablespoon ginger and 1 tablespoon garlic. Fry lightly while stirring.
Add chicken and turn up heat to fry lightly.
Add 1/4 teaspoon turmeric, 1/2 teaspoon chili powder and 3/4 teaspoon salt and stir briefly.
Add 1/2 teaspoon cumin powder.
Cover pan and simmer gently for 20 minutes or until chicken is cooked through.
Serve with boiled white rice and sliced red onion.
