Eggy bread with fruit kebabs

Serves: 2
Preparation time: 10 minutes
Cooking time: 5-6 minutes


1 medium egg

1 tbsp semi skimmed milk

4 slices of brioche

Selection of fruit – e.g. grapes, banana, strawberries, apples etc.

150ml (5fl oz) fat free natural yoghurt

1 tbsp clear honey


  1. Beat the egg and milk together, then soak the brioche slices in the mix.
  2. Place the bread on a grill pan with baking paper and place under a pre-heated grill. Cook for 2-3 minutes on each side until golden.
  3. While the bread is cooking, thread alternative pieces of your selected fruit on to two wooden skewers or four cocktail sticks.
  4. Place the fruit skewers on top of the eggy bread, drizzle with a little yoghurt and honey and serve.

Tip: You could use a thick slice of white farmhouse bread instead of brioche.
