Eggy bread with fruit kebabs
Preparation time: 10 minutes
Cooking time: 5-6 minutes
1 medium egg
1 tbsp semi skimmed milk
4 slices of brioche
Selection of fruit – e.g. grapes, banana, strawberries, apples etc.
150ml (5fl oz) fat free natural yoghurt
1 tbsp clear honey
- Beat the egg and milk together, then soak the brioche slices in the mix.
- Place the bread on a grill pan with baking paper and place under a pre-heated grill. Cook for 2-3 minutes on each side until golden.
- While the bread is cooking, thread alternative pieces of your selected fruit on to two wooden skewers or four cocktail sticks.
- Place the fruit skewers on top of the eggy bread, drizzle with a little yoghurt and honey and serve.
Tip: You could use a thick slice of white farmhouse bread instead of brioche.
