Preparation time: 10 minutes
200g (7oz) strawberries, stalks removed and quartered
80g (3oz) caster sugar or icing sugar
4 shop-bought meringues, crushed
300ml (10floz) double cream, whipped
200g (7oz) low-fat raspberry yoghurt
- Put the strawberries in a large bowl and sprinkle over the sugar. Using the back of a fork squash some of the strawberries to release the juices.
- Add the crushed meringues, cream and yoghurt and gently fold together with a spatula.
- Spoon into serving dishes or glasses and serve immediately.
Try: making this extra special by adding a drizzle of your favourite liqueur
