Home Cured Oily Fish

This recipe is amazingly simple. It needs a little planning ahead, but it is well worth it. Inspired by the freshly salted herrings, as one can find on a fish market in the Baltics or on the Ukrainian Black Sea coast, but made with our own specially formulated luxurious blend of aromatic herbs and spices. Try both salmon and herrings for an absolutely exquisite alternative to smoked fish.

Serves 4.
Preparation Time: 10 minutes.
Curing Time:18 hours.


• 350g herring fillets, salmon fillets, or other oily fish fillets.
• 2 tbsp AWT Organic Seafood Rub
• 1 tbsp caster sugar


Mix 2 tablespoons of AWT Organic Seafood Rub with 1 tablespoon of sugar.
Cover the surface of the washed fished fillets generously with the Seafood Rub cure. Rub the cure gently into the fish making sure that the entire surface of each fillet is uniformly covered on both sides.

Stack the fish fillets on top of each other, place in a container of appropriate size and cover with baking paper. Weigh down with a book, or similar, place upon a plate. Leave at room temperature for 5 – 6 hours.

Turn the fish over, draining any excess liquid, and place in the refrigerator over night.
Slice thinly and serve cold with organic rye bread and a spring of dill as garnish. Also good with wasabi and soy sauce.
