Parma Ham-wrapped Cod with Basil and Tomatoes

INGREDIENTS

4 x 150g (6oz) fillets skinless cod loin
4 tomatoes, thinly sliced
8-12 basil leaves
8 slices Parma Ham
15g (1/2oz) butter
2 tbsp olive oil
6 tbsp vegetable stock or Italian dry white wine
Salt and freshly ground black pepper
Asparagus spears, to serve

METHOD

  • Top each cod fillet with an equal amount of sliced tomatoes and basil leaves. Season with a little black pepper, then wrap 2 slices of Parma Ham around each fillet
  • Heat the butter and olive oil in a large non-stick frying pan. Add the Parma Ham-wrapped cod, cooking over a medium-high heat for 2 to 3 minutes. Turn over and cook on the other side. At the same time, cook the asparagus in lightly salted boiling water for about 6 to 8 minutes
  • Pour the stock or wine into the frying pan and reduce the heat. Cook the fish gently for a further 3 to 4 minutes, without turning. Serve with the asparagus

Cook’s tip: Cod is an excellent source of Omega 3, is low in fat, and works wonderfully with Parma ham. Serve this dish with crisp asparagus spears and baby new potatoes for a quick and healthy dinner.
