Gnocchi with wild mushrooms

Serves: 2
Preparation time: 10 minutes
Cooking time: 8 minutes


25g (1oz) dried wild mushrooms

500g (18oz) pack gnocchi

200g (7oz) pack shredded cavolo nero

1 tbsp rapeseed oil

150g (5oz) button mushrooms, halved

1 clove garlic, chopped

25g (1oz) walnut pieces, chopped

100g (3½oz) low fat soured cream

Fresh herbs for garnish


  1. Soak the dried mushrooms in 200ml (7fl oz) boiling water for 5 minutes. Drain and reserve the juice then roughly chop the mushrooms.
  2. Meanwhile, cook the gnocchi and cavolo nero in boiling water for 3-4 minutes. Drain well.
  3. Heat the oil in a large frying pan and fry the button and wild mushrooms, garlic and walnuts for 3-4 minutes. Add the mascarpone and reserved mushroom juice and heat for 1 minute.  Stir in the gnocchi and cavolo nero. Season to taste.
