British green bean, pea, tomato and mozzerella salad with grilled flat breads

Serves 4
Preparation time:
10 minutes
You’ll need:

Grilled Flat Breads200g fresh peas, shelled and cooked
200g fresh green beans, trimmed and cooked
1 buffalo mozzarella, torn
4 cherry tomatoes cut in half
2 vine tomatoes, each cut into 6
4 tbsp extra virgin olive oil
1 lemon, zested and juiced
Salt and black pepper
Small handful of basil, torn
2 grilled flatbreads

What to do:

1. Place the cooked peas, beans, torn mozzarella and tomatoes in a medium sized bowl.

2. Mix together in a small bowl the olive oil and lemon zest and juice and then season with salt and pepper.

3. Poor over the salad and toss gently, spoon the salad onto a large salad dish, sprinkle with basil and serve with grilled flatbreads.
