Jersey Royal Chips with Baked Brie and spicy tomato sauce
Serves four as a light lunch

Jersey Royals chips with baked brie and home made tomato sauce.Ingredients

16 large Jersey Royals.
1 x 250 gm Jersey Brie
50 ml white wine.
1 x large sprig thyme.
30ml vegetable oil to fry

For the tomato sauce:
200 ml water
4 tbsp sugar
4 tbsp rice vinegar
8 tbsp tinned tomatoes
1 tbsp red chilli (de seeded and chopped)
1 tsp salt
½ tsp ground white pepper

Place all of the ingredients into a saucepan and bring to the boil. Reduce by half
Blend the mixture for about 10 seconds and add more chilli if you like it hot!


1. To cook the Jersey Royals put them into a saucepan, cover with cold water and add a pinch of salt. Bring to the boil then turn down to a simmer and cook until you can put a small knife through the potato but it remains firm. Remove from the pan lay on a tray and allow to cool.

2. To bake the brie put it into a small oven proof dish and sprinkle with the white wine and the thyme, then place it into a pre-heated oven 200° C for 12 minutes

3. To prepare the chips cut the Jersey Royals into wedges, pre heat a deep fat fryer half full with vegetable oil to 170° C then plunge the wedges/chips into the oil. They should take about 5 minutes. When crispy, drain on kitchen paper and sprinkle with a little coarse salt

4. To serve put the chips in a little dish next to the baked brie with a pot of the spicy tomato sauce on the side
