Knickerbocker glorious granola

Jordans Knickerbocker Glorious GranolaPreparation: 15 minutes
Serves: 4
Suitable for vegetarians

Ingredients:

100g (4oz) Jordans Super Fruity Granola
1 large ripe mango, peeled, pitted and diced
200g (7oz) raspberries, thawed if frozen
1 pomegranate, cut into quarters and seeds removed
150ml (1/4 pint) fresh double cream
4 scoops vanilla ice cream

Method:

1 Mix together the mango, raspberries and pomegranate seeds
2 Whip the cream in a large chilled bowl until it holds its shape
3 Share half the Jordans Super Fruity Granola between 4 tall serving glasses. Add a spoonful of whipped cream to each glass, then share half the fruit mixture between them. Top with a scoop of ice cream, then spoon in the rest of the granola and the fruit. Top with the remaining cream and serve immediately

Cook’s tips:
• You can now buy ready-prepared pomegranate in handy tubs. Look out for them in the chilled area of the supermarket
• Chilling the bowl and whisk (or beaters) means that cream whips up more successfully – just pop them into the fridge for 20 minutes, or into the freezer for 5 minutes
• Don’t just think of this as a summer dessert – it’s a lovely treat to enjoy all year round – just choose your fruits according to what’s in season
