Lansdown waffles

Worth investing in a waffle iron for!

Cooking time: 10 minutes


For the waffles:

4 large eggs

1 large ripe banana

240ml full-fat coconut milk

5 tbsp coconut oil, warmed if solid

2 tsp vanilla extract

2 tbsp date syrup

60g coconut flour

90g potato flour

2 tsp ground cinnamon

1 tsp sea salt

melted coconut oil (to grease waffle iron)

For the cinnamon syrup:

4 tbsp coconut oil, warmed if solid

4 tbsp date syrup

2 tsp vanilla extract

2 tsp ground cinnamon

sliced bananas (optional)


1 To make the waffles, combine all of the waffle ingredients in a blender and blitz until smooth. Allow the batter to sit for 10 minutes and then blend again for about 3 seconds before using.

2 Coat your waffle iron with a little bit of coconut oil to prevent everything from sticking.
Pour enough batter to cover the bottom of the waffle maker, close and cook golden.

3 To make the cinnamon syrup, melt the topping ingredients together in a small saucepan and stir until combined. Cook until thickened.

4 Drizzle some syrup over the waffles and top with the sliced bananas (optional).
