Mango and lime sorbet
Preparation time: 5 minutes plus 6 hours freezing
2 mangoes, stoned, deseeded and roughly chopped
Zest and juice of 2 limes
400ml (14floz) mango juice, fresh
75g (3oz) golden caster sugar
1 Place all of the ingredients in a food processor and whizz until smooth. Pour into a large, shallow freezer-proof container and freeze for 2 hours or until lots of ice crystals begin to appear.
2 Break up with a fork and refreeze for 3-4 hours. Mix well to a smooth consistency and then freeze until needed.
3 Scoop into balls and serve with extra lime wedges and vanilla biscuits.
