Mediterranean spinach-filled rolls

Easy to make, these rolls make a great snack

Preparation time: 10 minutes

Cooking time: 2 minutes

Serves: 4





4 crusty bread rolls

260g bag spinach

280g jar chargrilled peppers in oil

1 courgette, halved then thinly sliced lengthways

2 tbsp basil, chopped

125g light mozzarella, sliced


1. Cut the tops off the rolls to make lids and reserve. Scoop out the bread so you are left with just the shell of the roll.

2. Place the spinach in a large bowl, cover with cling film and microwave for 2 minutes. Squeeze out all the excess liquid.

3. Drain the peppers and reserve the oil. Heat 1 tbsp of the oil and fry the courgette for 2-3 minutes until softened then mix in the peppers and basil. Season to taste. Place half the courgette mix in the base of the rolls. Add the mozzarella and the remaining courgette mix. Press in the spinach then top with the roll lid. Serve halved with salad.


Make breadcrumbs with the bread you scooped out of the rolls and freeze for later.
