Mexican tortilla melt
Preparation time: 5 minutes
Cooking time: 2 minutes
200g (7oz) pack lightly salted tortilla chips
170ml (6floz) tub sour cream
200g (7oz) salsa
25g (1oz) fresh jalapeno peppers, roughly chopped
75g (3oz) Cheddar cheese, grated
1 Place the tortillas on a large ovenproof dish. Top evenly with spoonfuls of the soured cream and salsa, scatter over the jalapenos then the cheese.
2 Place under a preheated grill for 1-2 minutes until melted. Serve straight away with chilli con carne or as a snack.
