Spaghetti with bacon
Simple, colourful and full of flavour
Ready in 20 minutes
150g smoked streaky bacon, chopped
1/2 tbsp olive oil
4 garlic cloves, chopped
a good pinch of dried chilli flakes
1/2 tsp dried oregano
400g can chopped tomatoes
a good handful of basil
50g Parmesan, finely grated
1 Cook the spaghetti in plenty of boiling water until just al dente. Drain and set to one side.
2 Heat a large, non-stick frying pan, add the bacon and cook for 3-4 minutes until golden. Remove from the pan and set to one side.
3 In the same pan add olive oil, garlic cloves chilli and oregano. Gently cook for 2 minutes before adding the tomatoes, sugar and 200ml of water. Return the bacon to the pan along with the hot spaghetti. Season to taste and serve scattered with the basil and Parmesan.
