Mincemeat in a jar

Makes: 2 large jars
Preparation time: 10 minutes
Cooking time: 2 hours plus soaking

400g (14oz) dried apricots, chopped
300g (101/2oz) cooking apple, chopped
400g (14oz) raisins
250g (9oz) sultanas
250g (9oz) currants
350g (12oz) soft dark sugar
Juice of 2 oranges
Juice of 2 lemons
1 tsp each mixed spice, ground all spice, ground cinnamon
3 tbsp brandy
6 tbsp Cointreau
200g (7oz) veg suet

Method:

1 Place the apple, dried fruit, sugar, orange and lemon juice in a very large pan. Add the spices and brandy and Cointreau and allow to soak for 2 hours.

2 Slowly bring to the boil and then simmer for 1 hour. Allow to cool completely before adding the suet. Spoon into 2 large sterilised jars and keep for at least one month and up to six before using.

Why not spoon into smaller sterilised jars and give to friends and family as the perfect Christmas treat
