Muesli biscuits

Makes: 12
Preparation time: 15 minutes, plus chilling
Cooking time: 15-20 minutes

100g (3½oz) butter, softened

25g (1oz) golden caster sugar

1 medium egg yolk

50g (2oz) oats

25g (1oz) oatmeal

75g (3oz) wholemeal plain flour

½ tsp baking powder

25g (1oz) dried apricots, chopped

25g (1oz) sultanas

Method

  1. Preheat the oven to 160°C/R3. Line two baking trays with baking parchment.
  2. Whisk the butter and sugar together until pale and fluffy. In a separate bowl, mix together the remaining ingredients and then mix into the butter mixture to make a firm dough. Chill in the fridge for 10-15 minutes.
  3. On a floured surface, roll or press out the dough to a 22x16cm rectangle, then cut into 12 biscuits. Place on the prepared trays and bake for 15-20 minutes until golden. Cool slightly before transferring to a cool rack.
