Parmesan crust chicken

Serves: 4
Preparation time: 10 minutes
Cooking time: 15-20 minutes


4 chicken breasts, skin removed
100g (31/2oz) fresh breadcrumbs
50g (2oz) fresh Parmesan, grated
50g (2oz) pine nuts
3 tbsp chopped fresh parsley
4-5 tbsp basil pesto
Salt and freshly ground black pepper
Olive oil for greasing and drizzling


1 Preheat the oven to 200°C /R6. Lightly grease a baking tray with a little oil.

2 Slice each chicken breast in half horizontally to make eight thin fillets.

3 In a small bowl mix together the breadcrumbs, Parmesan, pine nuts and parsley, and season with salt and pepper. Spread the pesto over the chicken breasts then cover generously with the cheesy crumb mixture. Place on the baking tray and scatter over any remaining topping. Drizzle with a little oil and cook for 15-20 minutes, until the crumbs are golden and the chicken is cooked through.
