Peanut butter fudge


FUDGE110g (4oz) crunchy peanut butter
290ml (9½fl oz) milk
450g (1lb) granulated sugar
50g (2oz) butter


1 tablespoon vanilla essence

1 Put the peanut butter, milk and sugar in a heavy-bottomed saucepan. Stir the mixture over a medium heat until the sugar has dissolved – about 10 minutes.

2 Bring to the boil, constantly stirring so mixture doesn’t burn. Turn the heat down to a simmer and keep stirring until a little of mixture forms a soft ball when dropped into cold water (115ºC/ 230ºF on a sugar thermometer). This should take 30 minutes.

3 Remove from the heat and add the butter and vanilla essence. Beat with a wooden spoon until creamy and glossy.

4 Pour into a greased and lined shallow tin 30cm x 20cm and leave to cool. Break into uneven chunks and place in a gift box.
