Student Suppers: Penne with Creamy Pesto
This is a really simple supper that you can put together in about 20 minutes flat – perfect for filling up teens after a tiring day in lectures!
350g penne pasta
1 tbsp pesto
100g Natural Yeogurt
100g grated cheddar cheese
Salt & pepper
1. Bring a pan of water to the boil, add the pasta and cook until al dente – about 12-15 minutes.
2. Drain and shake off the excess liquid then tip it back into the empty pan.
3. Stir through the pesto, the yogurt, cheese and seasoning and mix well.
4. Spoon into dishes, add a twist of black pepper and garnish with a few sprigs of rocket.
