Perfect BBQ sides
These sides are so simple to make and taste great

Cooking time: 20-30 minutes
Corn cobs with lime and herb butter
Combine 100g softened butter with 2 tbsp each finely chopped chives and parsley. Season and add ½ tsp paprika and the zest of 1 lime. Cook 6 corn cobs over the coals, turning frequently until slightly charred all over. Transfer to a large serving dish and serve topped with the butter.
Sweet potatoes with cumin chilli butter
Scrub and prick 6 medium-sized sweet potatoes and halve each one. Place each of the two halves on a large piece of foil. Combine 100g softened butter with 1 tsp lightly crushed cumin seeds, ¼ tsp chilli flakes and 3 tbsp chopped fresh coriander. Spread a little over all of the cut sides and sandwich the potatoes back together. Double wrap in the foil and then place in the coals to cook for about 30 minutes, turning occasionally. Check with a skewer to check they’re done.
Aubergine steaks with herbed tapenade
Thickly slice 2 medium aubergines and lightly score the flesh. Brush liberally on both sides with olive oil and season well. Place on the grill over the coals and cook for 20 minutes, turning occasionally until tender and lightly charred. Serve the aubergine steaks on a bed of rocket and top with 100g green olive tapenade. Serve straight away.
