Pork and sesame udon noodles

250g dried udon noodles
2 tbsp toasted sesame oil
500g pork mince
2 tsp grated fresh ginger
2 garlic cloves, chopped
1 tbsp gochujang chilli paste
3 tbsp soy sauce
1 red onion, thinly sliced
200g mangetout, finely sliced
25g beansprouts
4 tbsp roughly chopped coriander
juice 1 lime

1 Cook the noodles according to the pack instructions, drain and set to one side. Heat the oil in a non-stick wok or large frying pan and swirl around. Add the pork and break up with a wooden spoon, stir-frying until the meat begins to colour.

2 Add the ginger and garlic and cook for 2 minutes. Stir in the chilli paste and soy sauce, stir well and then add the onion and mangetout. Stir fry for 2 minutes, add the noodles, beansprouts and coriander and stir-fry until piping hot. Squeeze over the lime juice and serve straight away.
