Pork and blackbean stir-fry

Serves 4

Pork and blackbean stir-fryIngredients:

2 tbsp stir fry oil
600g (1 1/4lb) pork fillet, sliced into strips
200g-300g (7oz-101/2oz) tenderstem broccoli, sliced in half
1 bunch spring onions, cut into 3cm (1in) sticks
6 tbsp black bean sauce
2 tbsp lemon juice
100ml (31/2floz) chicken stock
Handful of roasted cashew nuts
Rice or noodles to serve


1 Heat 1 tablespoon of oil in a large wok, then add the pork. Stir fry for a couple of minutes, until browned. Remove from wok and keep warm.

2 Add remaining oil to wok, and stir fry broccoli and spring onions for a few minutes until broccoli is tender. Add black bean sauce, lemon juice and chicken stock. Cook for about 1 minute for sauce to thicken slightly.

3 Return pork back to the pan, add nuts and cook just long enough for it to heat through.

4 Serve with rice or noodles.

Instead of pork, you could use chicken, beef, prawns or for a vegetarian meal, try tofu or quorn
