Pork with apple and basil sauce
Quick, simple supper. Lovely mix of flavours.

Cooking time: 25 minutes
2 essential Waitrose British pork loin steaks
1 tsp balsamic vinegar
1 eating apple, peeled, cored and sliced
¼ x 25g pack fresh basil
¼ tsp chilli flakes
1 tsp lemon juice
2 tsp extra virgin olive oil
Preheat the grill to medium and cook the steaks for 22–24 minutes turning once, until cooked through. Transfer to a warm serving dish, drizzle with the balsamic vinegar and leave to rest for 5 minutes.
Meanwhile, make the sauce: place the remaining ingredients in a food processor and pulse until finely chopped. Check seasoning. Serve with the pork, mashed potato and steamed tenderstem broccoli.
