Raspberry toasted oat treat

60g porridge oats
120g reduced fat soft cheese
120g low fat natural yogurt
1 tbsp caster sugar
½ tsp vanilla extract
300g fresh or thawed frozen raspberries
1. Preheat the grill. Sprinkle the porridge oats onto a baking sheet and toast them lightly, turning once and taking care that they don’t burn. Cool.
2. Beat the soft cheese in a mixing bowl until smooth, then mix in the yogurt, sugar and vanilla extract. Stir in the cooled oats.
3. Put half the raspberries into the base of four serving glasses, reserving a few for decoration. Crush the rest of the raspberries with a fork, then stir them through the soft cheese mixture to give a pretty swirled effect. Spoon into the glasses and chill until ready to serve, decorated with the reserved raspberries.
