Sage roast potatoes
2kg (3lb 5oz) Désirée potatoes, cut into large chunks,
100ml (3ófl oz) olive oil,
12 sage leaves torn,
4 garlic cloves, chopped,
zest of 1 lemon
1. Preheat oven to 200°C/R6. Bring potatoes to the boil, simmer for about 10 minutes. Drain and rough the edges of the potatoes slightly with a fork.
2. Heat all but 1 tbsp of the oil in a large roasting tin until searing hot. Add potatoes and roast for 30 minutes. Place the reserved oil with the sage leaves, lemon zest, garlic and seasoning in a pestle and bash together. Spoon over potatoes, mix well and roast for 30 minutes.
