Sausage and tomato frittata

Serves: 4
Preparation time: 10 minutes
Cooking time: 15 minutes


130g (4½oz) new potatoes

1 tbsp rapeseed oil

4 cooked sausages

6 medium eggs, beaten

200g (7oz) can reduced salt and sugar baked beans

2 tbsp chopped parsley

150g (5oz) cherry tomatoes, halved


  1. Cook the potatoes in boiling water for 6-8 minutes until tender. Drain and then slice.
  2. Heat the oil in a 20cm frying pan then fry the potatoes and sausages for 2 minutes.
  3. Beat the eggs with the beans and parsley and season. Add the tomatoes to the pan and pour over the egg mixture. Cook gently for 6-7 minutes.
  4. Place under a preheated grill for 3-4 minutes until golden and cooked through. Allow to rest for a few minutes before removing from the pan.

Tip: Any leftover frittata will taste great served cold for breakfast the next day.
