Smoked Salmon Omelette
Smoked Salmon Omelette by James Martin
4 Happy Eggs
125g / 4 ½ oz sliced smoked salmon
25g / 1oz butter
50g / 2 oz crème fraiche
25g / 1 oz chopped chives
1. Melt the butter in a non-stick pan over a medium heat
2. Crack the Happy Eggs into a bowl and season well mix with a fork or whisk then pour the beaten Happy Eggs into the frying pan and lower the heat.
3. When the out side of the omelette starts to cook add the smoked salmon season with a little pepper. Fold in half and allow to cook for another minute then remove from the heat and place on the serving plate.
4. In a bowl mix together the chives and the crème fraiche and spoon over the top and serve.
