Butternut bake

Serves: 4
Preparation time: 15 minutes
Cooking time: 1 hour, 30 minutes

Chicken and Butternut BakeIngredients:

2 tbsp tomato paste
250ml (9floz) piri-piri sauce
400g (14oz) cannellini beans, drained
8 chicken legs
250g (9oz) butternut squash, skinned and cubed
200g (7oz) cherry tomatoes

Method:

  1. Preheat oven to 180°C/R4. Mix together the tomato paste and piri-piri sauce.
  2. Place the drained beans, chicken legs and butternut squash to a large oven dish and pour over the sauce.
  3. Roast for 1 hour, then add the tomatoes to the dish and return to the oven.
  4. Once the chicken and butternut squash are cooked and the tomatoes have blistered remove from the oven and serve.
