Chipotle chicken and avocado quesadilla
A quick, simple and spicy chicken dish
Preparation Time: 15 minutes
Cooking Time: 5 minutes
Serves: 4 (starter or snack)
4 Original Mission deli wraps
1 Cooked sliced chicken breast
1 Sliced avocado
4 Tablespoons of chipotle salsa
80 g of grated cheddar or emmental cheese
1 Handful of chopped fresh coriander
1. Heat a little sunflower oil in a frying pan. Add 1 deli wrap to the frying pan. Spread 2 tablespoons of chipotle salsa over the wrap and top with half of the chicken, avocado, cheese and coriander. Press another wrap down on top of the filling.
2. Allow to cook for about 2 minutes or until the wrap starts to go golden before flipping and cooking the reverse.
3. Repeat with the remaining ingredients and Deli wraps.
4. Chop into triangles and to serve.
