Spicy chorizo soda pizzas

Try this yeast-free alternative to your favourite pizza


Preparation time: 5 minutes

Cooking time: 10 minutes

Serves: 2-4


4 slices Irish soda bread

8 tbsp sun-dried tomato pesto

200g grated mozzarella or Cheddar

1/2 small red, yellow and green pepper, diced

150g chorizo, thinly sliced

2 green chillies, thinly sliced into rings

100g black olives, stones removed

4 tbsp olive oil


1.     Preheat the oven to 200°C/R6 and preheat the grill if you prefer a crispier base. If using the grill, arrange the soda bread cut-side up on the grill rack and lightly toast.

2.     Spread the pesto over the cut side of the soda bread and scatter over the cheese. Add the peppers, chorizo slices, chilli and olives then drizzle a little olive oil over each one.

3.     Arrange the prepared soda pizzas on a large tray and bake in the oven for about 8 minutes until the cheese is bubbling and the edges are lightly toasted. Transfer to warmed plates and serve.
