Sweet Chilli Lamb with Mange Tout and Noodles
Cooking time: About 10 minutes
450g (1lb) Welsh lamb steaks, cut into thin strips
15 ml (1 tbsp) oil
5ml (1 tsp) sesame oil
1 garlic clove, crushed
45ml (3 tbsp) sweet chilli sauce
1 lime, juice
100g of sugar snap peas
225g of pre-cooked noodles
4 spring onions, chopped
30ml (2 tbsp) fresh coriander, chopped
1. Heat oils in a large non-stick frying pan or wok, add the lamb strips and garlic. Cook for 4-5 minutes until meat is browned on all sides and cooked through.
2. Add the sweet chilli sauce and cook for 1-2 minutes.
3. Add the lime juice & rind, sugar snap peas &/or mange tout and stir through.
4. Lastly add the noodles and spring onion, toss together and serve scattered with coriander.
