Sweet potato, fig & feta salad

Serves: 4
Preparation: 10 minutes

Sweet potato, fig and feta salad 3Ingredients:

1 medium-sized raw sweet potato, peeled
6 figs, each cut into 6 wedges
Small bunch flat parsley
200g (8oz) feta cheese, cut into cubes
1 small punnet mustard and cress
1 tbsp black mustard seeds
4-6 tbsp extra virgin olive oil
Juice of 1 lime
Cracked black pepper, to taste


  1. Cut the sweet potato into thin little strips (like matchsticks) and place in a large bowl (if you have a mandolin, use the julienne attachment).
  2. Add the figs, parsley, feta cheese, mustard and cress, mustard seeds and olive oil and mix well.
  3. Add the lime juice, season with black pepper and mix again.
