Tortilla quiche lorraine

Tortilla Quiche LorraineIngredients:

200ml crème fraiche
142 ml double cream
2 eggs, beaten
1 tbsp oil
1 large onion, chopped
100g bacon, chopped
1 large Discovery Flour Tortilla or Discovery Wrap and Roll
50g Cheddar cheese, grated

Method:

Preheat oven to 200°C. Mix together the crème fraiche, cream, eggs, a little salt and plenty of black pepper. Heat the oil in a frying pan and fry the onion and bacon for about 5 minutes, until lightly cooked. Line an 8”/20cm loose bottom sandwich tin with the tortilla. Spread the bacon mixture over the tortilla, pour over the egg mixture and sprinkle with Cheddar. Cook in the preheated oven for about 25 minutes or until browned and lightly set. Cool slightly before taking out of the tin. Serve warm.
