Turkey, kale and blackcurrant stir-fry
This combination of ingredients is surprisingly tasty
Preparation time: 10 Minutes
Cooking time: 15 Minutes
1 head broccoli, cut into florets
1 tbsp oil
1 red onion, sliced
450g turkey breast, diced
4 level tbsp blackcurrant Jam
1-2 tbsp balsamic vinegar
1. Cook the broccoli and kale in boiling water for 3 minutes then drain well.
2. Meanwhile, heat the oil in a large frying pan and fry the onion and turkey for 5-6 minutes until browned. Add the vegetables and cook for 2 minutes.
3. Mix the jam with vinegar and add to the pan. Stir-fry for 1-2 minutes or until the turkey is cooked throughout.
