Vegetable pakora

This classic Indian finger food is hard for anyone to resist

Serves: 4

Preparation time: 5 minutes, plus 30 minutes resting time

Cooking time: 10 minutes

Ingredients

400g white onion, chopped

1 tsp whole coriander seeds

20g fresh fenugreek leaves, chopped

1 tsp dry fenugreek leaves

½ tsp cumin seeds

1 tsp ginger garlic paste

½ tsp green chilli, chopped

2 pinches asafoetida

20g chopped coriander leaves

1 tsp red chilli powder

20g fresh spinach, chopped

25g potato, chopped

25g carrot, chopped

25g cauliflower, chopped

4 tsp lemon juice

200g of gram flour

salt to taste

oil to fry



Method

1. Take a bowl and combine all of the spices, vegetables, ginger garlic paste and the lemon juice.
 Mix well and set aside for half an hour.


2. Add the flour and salt and mix well
.

3. Add more gram flour if needed to make the mixture thick
.

4. With the dough, make small round or oval shaped balls. Heat the oil, then drop a few balls at a time and fry till they turn crispy and golden brown.
