Warm Jersey Royals with crab mayonnaise and fennel cress

Serves: 4 as a starter

Jersey Royals with crab saladIngredients:

12 x medium size Jersey Royals.
120g picked white crab meat
3 tbsp mayonnaise.
2 tbsp yoghurt
Juice and zest of half a lemon
1 tbsp chopped herbs
1 clove of garlic (crushed)
1 tsp chopped red chilli
1 handful fennel cress
Salt and pepper

For the lemon dressing
1 tbsp lemon juice
3 tbsp olive oil

Mix together and season with salt and pepper

Method:

1. To cook the Jersey Royals put them into a saucepan and cover them with cold water and add a good amount of salt.

2. Bring to the boil then turn down to a simmer and cook until you can just put a small knife through, remove from the water and allow to cool slightly on a tray.

3. To make the crab mixture, mix together the crab, mayonnaise, lemon juice and zest, chilli, garlic, herbs and yoghurt.

4. When the Jersey Royals are still warm cut them in half and spread the crab mixture on the flat edge, sprinkle the cress on top, then sandwich the two halves together. Put three on a plate then drizzle the dressing over the top
