Chicken cassoulet

2 tbsp vegetable oil
1kg chicken legs
100g smoked bacon, chopped
2 onions, chopped
6 carrots, thickly sliced
3 celery sticks, thickly sliced
3 garlic cloves
good pinch mixed herbs
200ml white wine
300ml chicken stock
1 tbsp tomato purée
400g can cannellini beans, drained and rinsed

1 Heat the oil in a large, non-stick saucepan, add the chicken legs and cook over a medium heat to brown all over. Set to one side. Add the bacon to the pan and cook for 3 minutes until nicely browned. Set aside with the chicken.

2 Add the vegetables to the pan and cook for 10 minutes, stirring occasionally until the onion has softened. Stir in the garlic and herbs and cook for 2 minutes. Pour in the white wine, bring to the boil and bubble for 3 minutes.

3 Return the chicken and bacon to the pan, add the stock, tomato purée and beans and bring to the boil. Cover and simmer for 30 minutes until the chicken is cooked through. Delicious with warm garlic bread.
