Lamb koftas

Ready in 30 minutes

500g lamb mince
1 tsp ground cumin
1 tsp ground coriander
2 tsp caster sugar
2 tsp paprika
2 garlic cloves, crushed
2 tbsp chopped mint

1 Place the lamb in a large bowl and add all of the ingredients, plus 1/2 tsp fine salt and a good grind of black pepper. Divide into eight balls and shape each one around a metal skewer. Chill until needed.

2 Cook over a moderate barbecue or grill for 15 minutes, turning frequently until cooked through and lightly charred. Serve with rice, salad and fresh lemon.
