Sticky Chinese ribs
Ready in 2 hours
1.8kg pork ribs
500ml fruit cider
For the marinade:
5 tbsp soy sauce
6 garlic cloves, crushed
2 tbsp grated ginger
3 tbsp honey
2 tbsp rice wine vinegar
1 tbsp Chinese five spice
2 tbsp sesame oil
2 tbsp tomato purée
1 Place the ribs in a large pan with the cider and top up with water. Bring to the boil, cover and simmer for 1 hour 30 minutes until tender, depending on the thickness of the ribs. Drain well. Combine the marinade ingredients in a large flat dish, add the ribs and turn until thoroughly coated. Allow to marinade for 1 hour or overnight.
2 When you’re ready to cook, preheat the oven to 220 ̊C/200 ̊C fan/gas 7 or light up the barbie. Cook for 15-20 minutes, turning occasionally and brushing with the marinade as you go. Delicious with a zesty rice-noodle salad.
